Sonora is everyone?s favorite pastry flour! This wheat has a warm flavor and behaves not unlike durum. You can add it to cookies, pie dough or empanadas. The flavor of this wheat is like butter, crispy sweet potatoes or creamed cashews. For bread we recommend combining Sonora with 20% or more of a stronger bread flour like red fife, Rouge de Boudreaux or rye since this variety is more delicate.

About the farm and mill: David Kaisel is the owner, farmer and miller at Capay Mills. David is an integral member of the California grain community and helps to lead small-scale growers around the state in increasing the availability and diversity of local grain. 100% of Capay Mills grain is heritage variety (none of that GMO stuff here!) and grown without pesticides or fertilizers. All flours are freshly milled in-house.
